Meeting him inside the meadery:

"The bees are too agitated! They must be calm to produce the most flavorful honey."

What's wrong with your bees?

"Those Stormfist ruffians chased a giant across the road, right into my beehives. It's scaring the bees! And frightened bees make bitter honey.
You need to get rid of that giant before anything else goes wrong."

I can deal with the giant.

"Wait, it's coming. Another one of my brilliant ideas—there! And that is why Haraldar made me the master mead maker!
Use the bees against the giant! Just kick a beehive. The bees will go after the biggest target out there, the giant!"

That seems a little dangerous.

"Well, it was just an idea. And a rather good one, too. Oh, I know! Let me splash you with this. It smells like smoke and ashes. The bees hate it. Now you shouldn't have any bee problems."

Once you return:

"How are the bees? The success of the meadery depends on their honey. it has to be perfect!"

I killed the giant that was frightening the bees.

"And you brought me its toe. I was only joking about that, but thank you.
I started organizing things here. I don't suppose you ran into my brother Bjoruld, did you? He looks like me, but he's not as smart."

I haven't seen Bjoruld.

"I sent Bjoruld to get a barrel of appleblossom honey from the barn. He probably got lost, but I need that honey to make more mead.
Could you get the honey? And if you see Bjoruld, send him this way. He needs to deliver these casks to Windhelm."

What's so important about honey?

"What do you think mead is? It's fermented honey! The flavor changes depending on the honey, spices, and herbs used in the process. It's a delicate balance to get it just right.
You can try some when you come back."

Returning with the honey:

"Have lots of ideas for new flavors of mead. I just need to find more suppliers of spices and herbs."

Here's the honey you wanted.

"Wonderful! I'm sure it will make a delightful mead.
And another batch is ready. I would be honored if you would be the first to taste it."

What's in it?

"A touch of this, a bit of that. Just take a good long swallow.
See if you can taste the subtle notes of Alik'r spice, wildflower honey, and late summer herbs."

Take a swig of his mead and you'll pass out. You'll wake up in the inn room above. Return to him before speaking to Haraldar and he'll say:

"My new mead really knocked you on your arse! I call that an unqualified success!"

Dialogue

After the quest, he talks about his brews.

• "I thought we should call it the Five Brothers Brewery, but Haraldar said no. Voljar Meadery it remains."
• "Nightshade will work great in this recipe, but I don't want to kill anyone. Maybe just a pinch."
• "Bjoruld keeps wandering off. He always was the lazy one in the family."
• "I was thinking of naming one of my special recipes after you. Giant-Killer Mead. That has a nice ring to it."

Notes

• Even though the quest target is collecting a giant's toe, and Roruld mentions it when you come back, he never actually tells you to collect the toe.
